Tres Leches Cake

A light vanilla sponge absorbs three kinds of milk, then gets a simple whipped-cream topping for a cool family dessert.

Method

    Heat the oven to 350°F. Grease a 9-by-13-inch baking dish and combine flour, baking powder, and salt.

    Beat yolks with ¾ cup sugar until pale. Mix in whole milk and vanilla, then fold in the dry ingredients.

    Beat whites to soft peaks, add the remaining sugar, and beat to firm peaks. Fold gently into the batter.

    Bake for 25 to 30 minutes. Cool, poke the cake all over, and slowly pour over the three-milk mixture.

    Refrigerate at least 4 hours. Top with softly whipped cream and optional strawberries or cinnamon.
